Cut the sausage and carrots into small cubes. Chop the green onions.
In a large bowl, whisk the eggs. There is no need to beat the eggs, just until the white and yolk are combined. Season with salt, add sesame oil, add green onions, carrots and sausage and stir.
Heat vegetable oil in a 24cm frying pan over medium-high heat for 1 minute. Pour in a small portion of the egg mixture and spread over the bottom of the pan. Fry for 30 seconds until the mixture thickens. Using two spatulas, carefully roll the roll.
Slide the roll towards the edge of the pan. Add egg mixture to the empty space and cook for another 30 seconds. Continue rolling and adding mixture to the pan until the eggs are set. Place the finished sandwich on a board, cut crosswise into pieces 2 cm wide and serve immediately.
