These vegetarian dumplings are made with spinach and ricotta, giving them an unmistakably Italian character. By the way, if you make the dough with water and shape the pieces differently, you'll get ravioli, a dish much loved by the inhabitants of the Apennine Peninsula. But in this case, we insist on making dumplings, so we suggest following the appropriate guidelines. Note: the recipe for the filling recommends using frozen spinach, and this is not accidental. This will help achieve the right, almost uniform consistency, which is very important for dumplings.

Prepare all the dough ingredients and fillings for vegetarian dumplings. Place the frozen spinach in a colander and let it thaw completely at room temperature.
Prepare the dough for dumplings. Add sugar and salt to warm milk. Stir until they are completely dissolved. Beat in the egg and whisk with a whisk. Gradually add all the flour, kneading thoroughly. Pour in the oil. Knead the dough until smooth (10 minutes). Form into a ball, wrap in film and leave for 30 minutes at room temperature.
Squeeze the spinach. Chop it if necessary. Place in a bowl. Add ricotta and salt to taste. Mix thoroughly. The filling for dumplings is ready.
Remove the film from the dough. Place it on a work surface sprinkled with flour and divide it into pieces weighing 100 g. Roll each into a rope with a diameter of 1.5–2 cm.
Cut the dough ropes into pieces of approximately 11–13 g. Roll each one thinly into a flat cake, sprinkling with flour as necessary. Distribute the dumpling filling over them.
Bring the edges of the dough over the filling and seal the edges. Cook the dumplings in plenty of boiling salted water for 3 minutes after they come to the surface.
