This dish can be served for breakfast or used as a hot appetizer if you suddenly get hungry. Preparing cheese pancakes with mushrooms will, of course, require a bit more effort than regular ones, but you probably won't regret the time or effort spent. And if you sprinkle the dish with chopped dill and serve it with some good, rich sour cream, you're guaranteed a delicious breakfast, lunch, or dinner.

Prepare ingredients for cheesecakes. Peel the onion and chop finely. Wipe the champignons with a damp cloth, then peel and cut into small cubes.
Grease a frying pan with a teaspoon of vegetable oil and heat. Place onions and mushrooms in it. Fry, stirring, over medium heat for about 10 minutes. The mushrooms should brown and excess liquid should evaporate.
Prepare the dough for cheesecakes. Rub the cottage cheese through a fine metal sieve. Beat the eggs into a bowl. Add cottage cheese, salt and flour, mix thoroughly. The dough is ready.
Cover the mat used to prepare the rolls with cling film and sprinkle with flour. Spread the dough on top in a layer about 0.7 cm thick. Place the mushroom filling along the middle line. Helping yourself with a mat, form a “pyramid”.
Heat the remaining vegetable oil in a large skillet. Carefully place the “pyramid” with mushrooms into it and fry on three sides over low heat until golden brown.
Cover the pyramid pan with a lid and cook for two to three minutes. Let cool slightly, chop coarsely with a sharp knife and serve the cheesecakes.
