Cheesecakes with spinach and cheese are unsweetened, which distinguishes them from the usual ones we often serve for breakfast. Believe me, this idea works great! Many people note that unsweetened cheesecakes seem more filling, although their calorie content is almost the same as traditional ones. In this case, the dough is made with cottage cheese, with added ricotta, grated hard cheese, and spinach, so the taste of the finished product is very original, you could say intriguing. There's no need to complicate the cooking process: the cheesecakes are simply fried in a pan and then finished under a lid over low heat.

Prepare your ingredients. Wash the spinach and dry it with a paper towel. Melt butter in a frying pan. Add spinach and heat over low heat for three minutes. Let cool and chop with a knife.
Grate the cheese for the cheesecake dough on a coarse grater. Pass the cottage cheese through a fine metal sieve into a bowl, then stir into the ricotta until there are no lumps.
Add egg, flour, baking powder, nutmeg and salt to taste. Mix thoroughly. Combine with grated cheese and spinach. Knead the cheesecake dough.
Form the resulting curd dough onto a floured surface into a sausage with a diameter of 5 cm. Cut into “pucks” 1.5 cm thick. Roll each one in flour.
Heat a small amount of vegetable oil in a frying pan. Place some of the prepared curd pucks and fry for two minutes until golden brown.
Turn the cheesecakes over. Fry until golden brown on the other side. Reduce heat. Cover the pan with a lid and cook the cheesecakes for another 3 minutes. Serve immediately.
