Heat a frying pan over medium heat with 1 tsp. olive oil and fry the bacon until crispy. Transfer bacon to paper towels and let cool completely.
Toast the bread crumbs in a dry frying pan over medium heat until golden brown. Stir the bread crumbs constantly to prevent them from burning. Then transfer them to a suitable container, let cool completely and mix with 2 tbsp. l grated parmesan.
Cut the bacon and ham into small cubes. Finely chop the parsley leaves and cut out the stems of the mushrooms - you won't need them anymore, use them to prepare other dishes, such as omelettes, soups or stews.
Heat olive oil in a large frying pan, add crushed garlic cloves and immediately add champignon caps to the pan. Fry the mushrooms on both sides for 3-4 minutes until golden brown. Place the prepared mushrooms on a baking sheet.
In a bowl, combine bacon, ham, remaining Parmesan and parsley and season with salt and pepper. Fill the mushrooms with this mixture, then sprinkle the Parmesan bread crumbs on top.
Place the baking sheet with the champignons in the oven, preheated to 200°C, and bake the mushrooms for 7–10 minutes. Transfer the finished mushrooms to a dish and serve hot.
