Cut the bread into small pieces, pour in milk and leave for 15 minutes. Roughly chop the onion. Dry the meat with paper towels and cut into cubes. Remove the stems and finely chop the parsley leaves.
Pass the meat, onions and bread through a meat grinder. Add half the parsley, salt and mix thoroughly. With wet hands, form the minced meat into 8 balls and place on the board.
Hard boil eggs, 8 min. Cool in cold water, peel the shell and cut in half. Flatten the meat ball into a flat cake and place half an egg in the center, white side up. Cover the egg completely with minced meat, forming a cutlet.
Prepare the sauce. Heat the butter in a deep frying pan, add flour and fry until golden brown, stirring constantly, 1-2 minutes. Add lecho and pepper and simmer over low heat for 5 minutes.
Pour dry wine into the lecho pan, add salt and the remaining parsley. Cook over low heat, covered, for another 5 minutes. Stir the sauce several times with a spatula.
Preheat the oven to 180°C. Place the meat nests in a baking dish and place the meat nests on top of the sauce. Place the pan on the middle rack of the oven and bake for 30-35 minutes.
