Place the seafood cocktail in a sieve in advance, place it on a bowl of a suitable size and defrost on the bottom shelf of the refrigerator. Place the cocktail in a small saucepan, pour in the wine, salt and pepper, bring to a boil and cook for 5 minutes.
Cut the onion into small cubes. Chop the garlic. Remove the celery veins and cut the stalk into thin slices. Mash the cheese with a fork or crumble into small pieces.
Heat olive oil in a saucepan over medium heat, add butter. Add onion, garlic and celery and cook, stirring occasionally, 4 minutes. Season with salt and freshly ground black pepper.
Add cream and cheese to the vegetable saucepan. Cook over low heat, stirring constantly with a spatula, about 3-4 minutes. The cheese should be completely melted.
Place the nests in a deep frying pan with a diameter of 26 cm. Pour in hot water and salt. Water should completely cover the nests. Set the heat to medium and cook the nests, uncovered, for about 7 minutes. Cover the pasta with a plate and carefully drain the water.
Return the frying pan to the heat, place the seafood cocktail in the recesses of the nests, pour over the cheese sauce, cover with a lid and cook for 2 minutes. Use a spatula to place the nests into plates. Sprinkle with thyme leaves and serve immediately.
