The “Lady's whim” salad, judging by the name, was created especially for women. This is because it contains a lot of vegetables and herbs. The basis of this light dish is tomatoes and mozzarella. A classic combination that the fair sex likes so much. A special decoration for the salad will be homemade pesto sauce. Of course, you can use store-bought sauce. This will greatly reduce the cooking time. But we recommend that you prepare it yourself. It's not difficult, and the result will please you very much. This salad is good not only in everyday life. It will also look appropriate on the holiday table.

Serves:
Tomatoes - 300 g
Mini mozzarella - 200 g
Pine nuts - 100 g
Boiled wild rice - 20 g
Pepper - 2 g
Salt - 2 g
Extra virgin olive oil - 100 ml
Parmesan - 50 g
Basil (leaves) - 1 pc
Garlic - 1 clove
Salt, ground black pepper - 3 g
Salt - 3 g
1
Prepare all the ingredients for the Ladies' Caprice salad. Separate the basil leaves from the branches (we don’t need the stems; they can be used to make broths).
2
Prepare the ingredients for making pesto. Grate the Parmesan on a fine grater. Peel the garlic clove and pass through a press or chop very finely with a knife.
3
Place basil leaves in a blender bowl, add grated Parmesan, garlic, olive oil, pine nuts. Using the “pulse” mode, grind everything into a homogeneous mass. Make sure that the mixture does not heat up, otherwise the basil will lose its taste.
4
If the sauce is very thick, add a little more olive oil or a couple of tablespoons of boiled water. Add salt and pepper to taste and beat again with a blender or just mix with a spoon. The sauce should be smooth.
5
Cut the tomatoes into circles. Cut the mini mozzarella in half. Place tomato slices on a flat plate and half a mozzarella ball on top. Season with salt and pepper, spread over the cooked wild rice and top with pesto.
6
Serve the Ladies' Caprice salad, garnished with basil leaves and pine nuts. The pesto can also be served separately so that you can add it to the salad if desired.
