Traditional Tatar pancakes with semolina, known as tebikmek, are very tender thanks to the addition of semolina to the dough. The semolina and yeast in the composition make the pancakes unusually soft, delicate and literally melting in your mouth. Such pancakes are very popular in their homeland: in Tatarstan and neighboring Bashkiria, pancakes with holes are baked everywhere, especially during Maslenitsa week and other festive occasions. You can try hearty and tasty semolina pancakes even in local restaurants. And, of course, every housewife has her own secret recipe for making them. Tatar pancakes with semolina can be served with butter, sour cream or jam.

Flour - 300 g
Semolina - 160 g
Milk - 500 ml
Chicken eggs C1 - 2 pcs.
Sugar - 4 tbsp.
Vegetable oil - 3 tbsp.
Dry yeast - 1 tsp.
Salt - 1 tsp.
Baking soda - ½ tsp.
Jam, sour cream or honey for serving - to taste

Mix flour, semolina and 2 tbsp in a bowl. l. sugar, add salt and yeast. Pour in warm milk, stir and cover the bowl with the dough with cling film. Leave for 1–1.5 hours.
Mix the eggs with vegetable oil and the remaining sugar and pour into the dough. Dilute baking soda in 50 ml of warm water and also pour into the dough. Mix again with a mixer. If the dough is too thick, thin with milk or water to the desired thickness.
Heat the pan and pour in a portion of the dough. Spread the dough over the bottom by tilting the pan in different directions. Bake the pancake for 1-1.5 minutes, carefully turn over and continue baking for another 30 seconds - 1 minute. Transfer the finished pancake to a plate. Continue baking until all the dough is used up. Stack pancakes to keep them warm. Serve with jam, sour cream or honey.
