Traditional Russian food - grechniki (or sinners in the Old Russian version) - was usually served with Lenten cabbage soup. But we think this could be a great breakfast! Generously flavored with sour cream, cream cheese or soft cottage cheese, such buckwheat will give any sandwich a head start. In addition, they look much more interesting on the table than ordinary buckwheat porridge. And you can take them with you as a hearty snack to work, on the road or on a picnic. And they are prepared easily and quickly - literally in 15 minutes. And buckwheat is good in any form - hot or cold. Simply wonderful in all respects and very healthy home-made “fast food”, you must agree.

If necessary, sort the cereal and rinse thoroughly so that the water flowing from it is clear. Place on a sieve, place in a saucepan and pour in 700 ml of boiling filtered or bottled water.
Bring to a boil, skim off foam if necessary. Add salt, reduce heat to low and cook, tightly covering the pan with a lid, for 1 hour.
Remove the resulting hot porridge from the heat, add flour to the porridge and stir very thoroughly. There shouldn't be a single lump of flour left!
Place the hot mixture on a baking tray lined with greased baking paper or in a baking dish, in a layer approximately 1.5 cm thick.
Level the porridge with a spatula or damp palm. Place the pan in a cool (120–130°C) oven to dry for 10 minutes, then remove and cool. This can be done the night before.
Cut the finished sinners into small rectangles with a knife and fry in oil on all sides until golden brown just before serving. Serve hot or cool - with cheese, cottage cheese or sour cream.
