Tatar flatbreads kystyby is a traditional Tatar dish, which is most often prepared with only two different fillings. With millet porridge, which is cooked with the addition of milk, or with mashed potatoes, into which fried onions are placed. The dough for kystyby is made unleavened, without adding yeast or baking powder. Most Tatar or Bashkir housewives do not even add eggs to it. But such dough can be kneaded not only with water, but also with milk, sour cream or kefir. Moreover, the liquid base is always heated, this is necessary so that the dough becomes more pliable when rolling out.

Heat kefir to 40-50°C, add vegetable oil and salt to it, mix thoroughly. Sift the flour and add it in portions to the kefir, kneading a soft dough.
Dust your work surface with flour, remove the dough from the bowl and begin kneading it. Knead until it becomes homogeneous and no longer sticks to your hands. Roll the dough into a ball and put it in a bag or leave it in a bowl, covered with cling film, for 30 minutes. During this time, the gluten will develop and it will be very easy to roll out.
Boil the potatoes in salted water. Heat the milk, add 100 grams of butter to it, stir. Drain the water from the potatoes, mash the tubers into a puree, pour in milk and butter. Make smooth mashed potatoes.
Peel the onion and cut into small cubes. Heat a frying pan, add vegetable oil and the remaining butter. Put onion. Fry until golden brown. Chop the dill or parsley. Add to mashed potatoes along with fried onions, salt and pepper, mix thoroughly.
Divide the dough into 15-20 parts and roll each into a ball, cover with a towel or cling film. Take the balls out from under the towel one by one and roll them into a circle no more than 1-2 mm thick.
Take a frying pan with a thick bottom. Fry the flatbreads on both sides in a dry frying pan without oil until golden spots appear. Dark tan marks are considered a defect among Tatar housewives. Place the finished tortillas on a plate and cover with a thick towel.
Melt the butter. Spread mashed potatoes over one half of the flatbread, the layer should be at least 5-7 mm. Cover with the other half. Grease each kystyby on both sides with butter, place them in a stack on a large plate and serve.
