Pancakes made with tomato juice differ from ordinary ones not only in their original taste, but also in their rich color, so they look truly festive on the table! So, if, for example, you are thinking about how to surprise the guests who are going to visit you during Maslenitsa week, take note of our recipe. The pancake dough is prepared in a completely traditional way, only tomato juice is added to the milk. But we recommend serving them with a spicy sour cream sauce, seasoned with garlic and chopped herbs. Very tasty!

Serves:
Flour - 160 g
Tomato juice - 250 ml
Milk - 250 ml
Egg - 2 pc
Sugar - 1 tbsp
Salt - ½ tsp
Butter 82.5% - to taste
Refined vegetable oil - to taste
Sour cream 33% fat - 200 ml
Dill - 4 bunch
Parsley - 2 bunch
Garlic - 1 clove

Prepare all pancake batter ingredients. Pour milk into a large bowl. Add tomato juice. Add salt and sugar. Stir until they dissolve.

Sift the flour into a separate bowl. Add to the tomato-milk mixture, stirring constantly to avoid lumps. Beat in the eggs. Mix with a whisk.

Cover the resulting dough with a napkin and leave for 20 minutes at room temperature. During this time, gluten will develop in it, and the pancakes will not tear when turned over in a frying pan.

Place a frying pan with a thick bottom and low sides over medium heat. Heat it up. Lubricate with vegetable oil using a brush. Pour some pancake batter.

Fry the pancake until the top layer is set (a little less than a minute). Turn it over. Fry the pancake on the other side until browned. Transfer to a plate and brush with melted butter.

Prepare pancakes using the remaining tomato batter in the same way. Place the finished ones in a stack on a plate, brushing with butter. Keep in a warm place until serving.

Wash the dill and parsley and dry well with a towel. Remove rough stems. Finely chop the remaining greens. Peel the garlic and pass through a press.

Add dill, parsley and garlic to sour cream. Whisk lightly to combine ingredients. Serve the resulting sauce with pancakes made with tomato juice.
