Three-layer Mari pancakes are called koman melna, which literally means “puff pancakes.” This is an amazing dish, as such pancakes are prepared in an unusual composition and in an unusual way. First, unleavened dough is made from two types of flour - rye and wheat. The flatbread is rolled out in a dry frying pan and sent to the oven. This stage is called “drying the pancake.” After drying, the pancakes are stacked, then a layer is applied to each pancake. Usually, different cereals are taken for the layers - semolina, wheat, oatmeal and boiled corn. After baking the first layer, a second one is applied on top, and the pancake is sent back to the oven. In our recipe, we used a mixture of wheat and oat flour for pancakes, and small oat flakes with sour cream as a topping. And in the absence of a real oven, we suggest using an oven.

Mix oatmeal with sour cream, add a pinch of salt and leave to swell for 20-30 minutes.
Knead the rye dough. Combine rye flour, egg and salt in a bowl and knead into an elastic dough. If necessary, add 1-2 tbsp. l. cold water. Roll the dough into a ball, wrap in cling film and leave on the work surface for 20 minutes.
Prepare oatmeal dough. Combine oatmeal with milk and sour cream, add salt and mix with a mixer.
Preheat the oven to 200°C. Line a baking tray with baking paper and grease with vegetable oil. Divide the rye dough into 4 parts, form each into a ball and roll into flat cakes 3–4 mm thick. Place on a baking sheet and bake for 3 minutes.
Remove the baking sheet and spread the oatmeal dough onto the tortillas. Level with a spatula, return the pan to the oven and bake for 3 minutes.
Remove the baking sheet again and brush the pancakes with swollen oatmeal and sour cream. Bake for another 2 minutes. Flip the pancakes over to the other side and continue baking for another 3-4 minutes. You should end up with pancakes approximately 6-7mm thick. Place the pancakes on plates and brush with butter. Serve hot.
