Step 1

Preheat oven to 200°C. In a large bowl, whisk the eggs. There is no need to beat the eggs, just enough for the whites to just combine with the yolks. Season with salt and pepper. Cut the cheese and ham into thin slices. Cut the onion into halves of rings. Cut the tomato into circles.

Cut the baguette lengthwise and carefully remove the crumb. The walls of the baguette should be approximately 1.5 cm thick. No crumb is required to make the sandwich. Spread the top of the baguette with half the butter, and the bottom with mayonnaise.

Heat 20g butter in a large frying pan over medium heat and pour in the eggs. Cook, stirring constantly with a spatula, for 2-3 minutes until the eggs are set. Remove skillet from heat and let eggs cool slightly, 5 minutes.

Place the scrambled eggs in the top half of the baguette and cover with slices of cheese. Place the ham on the bottom half and brush with mustard. Add onions and tomatoes. Carefully bring the halves together and brush the baguette with the remaining butter. Wrap the sandwich tightly in foil and place on the middle rack of the oven.
