Mordovian pancakes with millet are called pachat. In the old days, pancakes with millet were considered “sacrificial bread” in Mordovia and were baked for holidays, but now Mordvinians prepare them as an everyday dish. Due to the fact that millet is added to the dough, this makes the pancakes more satisfying. Another feature of them is a large number of eggs. But Mordovian pancakes differ from Russian pancakes not only in composition, but also in shape - they are very thick. Our pancake recipe includes dry yeast - it will make the dough softer and fluffier and add airiness to the pancakes. In this case, there is no need to prepare the dough: the dough will rise within an hour after kneading. Mordovian millet pancakes are usually served with honey, sour cream or jam. Or you can sprinkle them with additional sugar.

Gluten-free flour - 300 g
Boiled millet - 200 g
Milk - 400 ml
Chicken egg - 4 pcs.
Egg yolk - 2 pcs.
Butter 82.5% - 50 g
Granulated sugar for sprinkling - 3 tbsp
Dry yeast - 1 tsp
Salt - 1 tsp
Vegetable oil - ½ tsp
Sour cream, jam and melted butter for serving - to taste

Melt and cool the butter. Grind the millet into flour. Heat the milk to 40°C.
Pour milk into a large bowl, add 1 tbsp. l. sugar and dry yeast. Stir and leave for 10 minutes. Combine the eggs and yolks with the remaining sugar, salt and melted butter, pour into the bowl with the milk mixture and stir.
Pour both types of flour into the bowl and mix again with a mixer. Cover the bowl with cling film and leave the dough to rise for 1-1.5 hours.
Heat a frying pan with a diameter of 18–20 cm over medium-high heat. Grease the bottom with vegetable oil and pour in a portion of the dough. Tilt the pan, spread the dough over the bottom and bake the pancake for 1–1.5 minutes. Carefully flip to the other side and cook for another 1 minute. Place the finished pancakes in a stack on a plate. Serve pancakes with sour cream, jam and melted butter.
