How to cook potato soup with pork in Latvian? Very simple and, most importantly, fast! There is no need to cook the broth: pre-fried pieces of pork add richness to the soup. That is, in essence, you first simmer a stew of meat and vegetables, and then add chopped potatoes and water. Well, to make its taste more piquant, at the very end of cooking the soup, add pickles and parsley. If you wish, season the dish with caraway seeds: it is very popular in Latvian cuisine. In general, try it: it will be at least interesting!

Pork pulp - 400 g
Medium size potatoes - 3 pcs.
Salted cucumbers - 2 pcs.
Medium sized carrots - 1 pcs.

Parsley root - 1 pcs.

Prepare all soup ingredients. Cut the pork into small slices. Heat vegetable oil in a thick-walled saucepan. Add the meat and, stirring, fry on all sides until golden brown.
Peel the carrots and parsley root and cut into strips. Peel the onion and cut into half rings. Pour 300 ml of hot water into the pan with meat. Add carrots, onions and parsley root. Simmer over low heat for 30 minutes.
Peel the potatoes and cut into strips. Add to pan with vegetables and meat. Pour in 2 liters of drinking water and bring to a boil over high heat. Cook for 15 minutes.
Cut the pickled cucumbers into strips (if they are large, peel the fruits). Finely chop the parsley, first removing the coarse thick stems.
Add pickles and parsley to the almost finished soup. Salt and pepper to taste. Cook potato soup over medium heat for another 5 minutes. Pour into plates and serve.
