Pour the rice into a sieve and rinse under running water until it becomes clear. Then place in a thick-bottomed saucepan, add water and heat over low heat.
When the porridge boils, salt it and cover with a lid. Cook over low heat until the cereal has absorbed all the water. Stir occasionally to prevent burning.
Cool the rice to room temperature. It should be crumbly. If your grains stick together, rinse them under running cold water. Place in a sieve to drain the water.
Sort out the raisins (it’s better to take both light and dark), then put them in a bowl and pour boiling water over them. Leave for 15-20 minutes. Place the raisins in a sieve, rinse and dry with a paper towel.
Melt butter in a frying pan. Place raisins and sprinkle with sugar. Cook, stirring, until the sugar caramelizes. Add raisins to rice and stir.
Dry the almonds in a frying pan. Add honey to the porridge to taste and stir again. Garnish with almonds and serve with compote. You can also sprinkle with poppy seeds.
