A classic Italian dessert, panna cotta, is made from milk and cream with the addition of gelatin. This is a delicate milk jelly, which in our recipe is given a special spicy caramel taste by baked milk, cinnamon and vanilla sugar in the composition, and a bright accent is provided by quick frozen lingonberry jam with juniper, orange zest and a small amount of cognac. All the components of the dessert are prepared very quickly, but be sure to have time and patience - it will take several hours for the dessert to harden in the refrigerator.

Baked milk - 300 ml
Salt - 2 g
Brown sugar - 60 g
Vanilla sugar - 30 g
Leaf gelatin - 15 g

Prepare the jam. Crush the juniper berries and chop finely. Mix all ingredients in a saucepan, bring to a boil and cook for 5 minutes. Remove from heat, cool and place in the refrigerator for 1 hour.
For the panna cotta, combine the cream, milk, brown and vanilla sugar, cinnamon and salt in a saucepan, place over medium heat and cook for 10 minutes. The mixture should boil down by a third.
Soak gelatin in cold water for 10 minutes. After 10 minutes of cooking the milk mixture, add dissolved gelatin and lime zest, stir and remove from heat. Blend the mixture with a blender for 1 minute. Pour the panna cotta into bowls and refrigerate until set, 2 hours.
Stir the jam and add to the panna cotta. Garnish the dessert with mint and serve.
