Liver cutlets from pork liver according to this recipe are very simple to prepare at home and will be suitable even for a novice cook. You can rest assured that they will easily replace many of your favorite classic pork cutlets! The dish will turn out to be appetizing, healthy and perfect not only for lunch and dinner at home, but also as a snack at work - after all, such cutlets are equally good both hot and cold. And you can make absolutely any side dish for them - they go perfectly with cereals, mashed potatoes and even with a simple salad of seasonal vegetables.

Place the pork liver in a bowl and cover with milk, leave for at least 1 hour. After this, dry it with paper towels and cut into small pieces.
Place the lard in the freezer for 15-20 minutes so that it freezes a little. This will make it easier to cut. If necessary, remove the skin from the lard and cut it into small pieces.
Chop the onion as desired. Pass the onion, pork liver and lard through a meat grinder or in the bowl of a blender or food processor in the “pulse” mode. Don't get carried away! The mixture must retain its texture and not become too liquid.
Add egg, salt and ground black pepper to the resulting minced meat. Also add wheat flour, dried garlic and mix everything well.
Leave the minced meat to sit at room temperature for about 10 minutes, and then check - it should be thick, but still slightly runny.
If the minced meat is too liquid, add another 1 tbsp. l. flour. When adding flour to the workpiece, be guided by the specified consistency of the minced meat.
Heat vegetable oil in a frying pan over medium heat. Using a tablespoon, carefully place the minced meat into the pan, trying to form even round cutlets.
When placing pork liver cutlets in a frying pan, be sure to leave a distance of at least 1.5-2 centimeters between them. This, firstly, will help to avoid the cutlets sticking together, and secondly, it will allow them to fry evenly and beautifully.
Fry the cutlets over medium heat for 3 minutes on each side until golden brown. Do not fry the cutlets too much, otherwise they will become too tough and rubbery.
Cover the pan with a lid and turn off the heat. Let the cutlets stand covered for 5-7 minutes, during which time the juice will be evenly distributed in them and the cutlets will be especially tasty.
Serve the finished liver cutlets with your favorite side dish. An excellent addition to them can also be a gravy based on onions, mushrooms, or even a simple cream sauce.
