This easy-to-make broccoli recipe with sesame seeds and soy sauce is the source of an unusual combination of flavors. The dressing, in addition to soy sauce and sesame seeds, includes pineapple juice, sesame oil and garlic. In the finished dressing, which is boiled down three times, the ingredients will create a symphony with a new unexpected taste, which will greatly decorate the broccoli florets blanched and fried in butter. For the dressing, mix pineapple juice, soy sauce, and garlic through a press in a saucepan. Bring to a boil and reduce by 3 times. Strain, add sesame seeds, cool and keep in the refrigerator.
Pour 2 liters of water into a large saucepan, add sugar, 10 g salt and 40 g butter and bring to a boil. Cut the broccoli heads in half and blanch for 4 minutes. Immediately transfer to a large bowl, pour over the unagi sauce and add the remaining salt, stir to combine.
Heat a frying pan and melt the remaining butter. Fry the broccoli on all sides for 1 minute over medium heat, transfer to a plate and pour over the dressing.
