This eggless, dairy-free banana muffin is ideal for vegans, fasting people and those with lactose intolerance. And no compromises: the baked goods turn out very tasty, tender, with a moist crumb! And, of course, one cannot help but note the amazing banana aroma of the cupcake, which captivates all lovers of these fruits. The dough, as expected in this case, is prepared simply and very quickly. And banana cake usually takes no longer than 40 minutes to bake. But we still highly recommend checking readiness with a wooden skewer. Pierce the cake in the middle with it and remove. If the skewer is almost dry (remember that a little moisture is okay), remove the pan from the oven. If not, keep the cake in the oven for another 10 minutes.

Fine sugar - 80 g
Baking powder for the dough - 1.5 tsp
Ground cinnamon - ½ tsp

Prepare the cake batter. Toast the walnuts in a dry frying pan over medium heat until fragrant. Stir constantly to prevent them from burning. Let the nuts cool and chop them finely.
Peel the bananas for the cake batter and place in a small bowl. Using a fork or potato masher, mash until smooth.
Add salt, sugar to the banana puree and mix. The sugar should dissolve. Pour in vegetable oil. Mix thoroughly again with a whisk (do not beat).
Sift the flour with cinnamon and baking powder through a sieve. Pour into the banana mixture in portions, stirring thoroughly. Add chopped nuts. Mix thoroughly again.
Preheat the oven to 170 C. Pour the resulting dough into a rectangular muffin tin, greased with a little butter or lined with baking paper. Level the surface.
Bake the banana cake for 40-45 minutes. It should be browned on top, but still moist inside (not raw!). Remove the cake from the oven and let cool in the pan.
Carefully remove the cake from the pan onto a serving plate. Sprinkle with powdered sugar through a strainer. Can be covered with any glaze. Serve with tea or coffee.
