Pork liver cake is a food loved by many since childhood. It reminds you of holidays with family and friends. This cake looks festive and is very easy to prepare! Let us note that this is not a dessert at all, but a tasty and satisfying dish that can be served not only as an appetizer, but also as the main part of lunch or dinner. Invented during Soviet times, the classic recipe includes ingredients available to everyone. But despite the simplicity of its ingredients, liver cake turns out to be a real delicacy and remains a favorite dish for many generations.

Soak the pork liver in milk for at least one hour. After this, dry it with paper towels and cut into small pieces of the same size.
Cut the onions into small cubes and grate the carrots on a coarse grater. Heat vegetable oil in a frying pan over medium heat and fry the vegetables in it until soft. Transfer the prepared vegetable mixture from the frying pan into a suitable container.
Pass the pork liver through a meat grinder or grind in the bowl of a blender/food processor until smooth. Add spices, milk and chicken eggs to the resulting minced meat.
Begin to mix the mixture gently and at the same time gradually pour flour into it. Use a pastry whisk to break up any lumps well. The dough for liver cakes should be homogeneous and the consistency should resemble thick sour cream.
Heat vegetable oil in a small-diameter frying pan over medium heat (the size of the frying pan will depend on the size of the future cake) and begin frying the liver cakes, evenly distributing the dough over the entire surface. Fry for 2-3 minutes on each side. Try to make the cakes as thin as possible - in this case, the taste of the liver cake will be especially delicate.
As soon as all the cakes are ready, immediately, while they are still warm, start assembling the liver cake: grease each cake with mayonnaise and arrange the layers with fried vegetables. Grease the top layer of the cake with mayonnaise and sprinkle with grated cheese.
Don't eat the liver cake right away. To soak it, you need to put it in the refrigerator for at least 3 hours, and preferably overnight. Serve the dish garnished with your favorite herbs, cherry tomatoes or olives.
