If you want something sweet, but not burdensome on your figure, then this is definitely it - coconut-banana cookies with sesame seeds, without flour and sugar. In the summer, such a dessert will go with a bang in any company. Cookies are prepared from the pulp of fresh coconut (don’t be alarmed, the recipe will teach you how to handle it) and banana with the addition of cardamom, cinnamon and lemon zest. There is no flour in the recipe, which means these cookies are suitable for anyone who avoids gluten in their diet. The sweetness of the liver is provided by a banana, so choose the ripest specimens in the store with slightly darkened skin.

Preheat the oven to 180°C. Poke an awl into one of the indentations located at the top of the coconut and drain the liquid. Place the coconut in a tight bag, cover with a towel folded in 2-3 layers and hit it hard with a hammer or heavy rolling pin. Remove the shell from the nut and use a paring knife to remove the brown skin.
Grate the nut pulp on a coarse grater. Line a baking tray with baking paper, spread the grated coconut in an even layer and place in the oven for 10-12 minutes. In the middle of this time, stir and add sesame seeds. Cool. Grind half the mixture into flour in a coffee grinder or blender.
Peel the bananas, mash them together with lemon juice and spices. Add coconut, sesame seeds and sesame flour, stir until smooth.
Spoon the dough onto the same baking sheet lined with paper, forming round, thin cookies 6–8 cm in diameter. Bake in the center of the oven until golden brown, about 15 minutes. Cool before serving.
