Ptitim with vegetables is an excellent Lenten vegetarian dish. Mysterious ptitim is nothing more than a paste made from durum wheat in the form of small elastic balls. This Israeli paste is quickly winning the sympathy of chefs and cooks from all over the world, as it is ideal for use in salads, soups and hot dishes, almost does not lose its shape and perfectly absorbs sauces. In our recipe we combine bird meat with baked zucchini, red onion and fresh baby spinach leaves, season with lemon juice and olive oil.

Preheat the oven to 200°C. Cut the zucchini into slices 1–1.5 cm thick. Cut the onion into feathers. Line a baking tray with baking paper, arrange the vegetables in a single layer, add salt and freshly ground black pepper. Sprinkle zucchini with garlic powder if desired. Place the baking sheet on the middle rack of the oven and roast the vegetables for 15 minutes.
Boil 1.5 liters of water in a wide saucepan, add salt and pour in the poultry. Cook over medium heat, stirring frequently, for 5 to 7 minutes or according to package instructions. Drain in a colander and let the liquid drain.
In a large bowl, combine boiled poultry, roasted vegetables and fresh spinach. Pour lemon juice and 4 tbsp. l. olive oil, stir with a spatula. Ptitim with baked vegetables can be served hot, warm or cold.
