A green salad is always good on its own and should be regularly included in your diet as a source of fiber and healthy vitamins. Combined with feta cheese cream and a raspberry and balsamic vinegar dressing, a simple green salad of different types of greens becomes a real work of gastronomic art. All the ingredients for this recipe can be prepared in advance (and even with a reserve for several times), but you should mix them just before serving, since the delicate greens will quickly lose their texture and crispness under the influence of oil and vinegar.

Flower honey - 10 g
Cream 22% fat - 16 ml
Ground coriander - 0.1 tsp.
Raspberries - 100 g
Balsamic vinegar - 60 ml
Extra virgin olive oil - 16 ml
Granulated sugar for sprinkling - 10 g
Black peppercorns - 2 pcs.
Spinach - 70 g
Young chard - 20 g
Oakleaf lettuce (oakleaf) - 30 g
Romano salad - 50 g
Basil leaves - 5 pcs.
Cilantro leaves - 5 pcs.

Extra virgin olive oil - 40 ml

Mix all feta cream ingredients with a whisk until creamy. Refrigerate until serving.
To season, pour sugar into a saucepan and heat for 1 minute over medium heat. When it begins to caramelize, add raspberries and peppers to the saucepan, cook for 1 minute and add balsamic vinegar and olive oil, bring to a boil. Remove from heat and grind the dressing in a glass blender for 1 minute, strain, cool and refrigerate for 30–60 minutes.
Place the feta cream on deep plates, make an indentation in it with a spoon and spread lightly towards the sides of the plate. Mix lettuce leaves and herbs and season with oil, salt and pepper. Place the salad on top of the cream cheese and drizzle with the raspberry vinaigrette.
