As for the filling, we would strongly advise against skimping on it and using ready-made store-bought minced meat. Buy a good piece of pork that is not too fatty and mince it along with onions and garlic. Season to taste and use according to recipe. Prepare the dough for pork dumplings. To do this, sift the flour and salt through a fine sieve into a bowl. Make a small indentation on top.
Beat an egg into it and pour in a couple of tablespoons of very cold water. Gradually collecting flour from the edges, knead the dough. Then add the remaining water little by little (you may need a little more or a little less).
Knead the dumpling dough by kneading it, twisting it and beating it on the table. This may take about 15 minutes. Then cover the dough with cling film and leave for 30 minutes. During this time, the dough will become softer and it will be easier to roll it into a thin layer.
Prepare the dumpling filling. Cut the pork into small pieces. Peel the onion and garlic. Pass the prepared ingredients through a meat grinder with a fine grid 2 times.
Add salt and pepper to the minced meat to taste. Mix thoroughly. Then knead the minced meat for 10 minutes, periodically beating it on the bottom of the bowl until it becomes sticky.
Roll out the dough very thin on a floured work surface and cut out circles from it. Spread the meat filling over them. Fold each one in half. Carefully pinch the edges of the dough and connect the corners.
In a large saucepan, bring water to a boil and add a little salt. Dip a portion of the resulting dumplings into it and cook for 5 minutes after floating to the surface.
Use a slotted spoon to transfer the finished dumplings to plates. Prepare the next batch. Pork dumplings can be served with sour cream or sauce to taste.
