The composition of the dessert is completely ordinary, but a pleasant surprise awaits you inside - a small animal made from a dark biscuit. It is quite simple to prepare it. We will divide the dough into 2 parts and add chocolate and cocoa powder to one. Let's bake a dark sponge cake and cut out our rabbits using a cookie cutter - we'll spend the entire cake on making the animals. Then pour a little light dough into the mold, root the pieces vertically in it and bake a little so that it sets. Fill with the remaining light dough and place in the oven until ready. This baking option is sure to please children, and will also appease the coming Year of the Black Water Rabbit. Prepare all the ingredients according to the list for making the New Year's Bunny cupcake. Preheat the oven to 180°C. Line an oblong pan with high sides with parchment soaked in butter. Divide the eggs into whites and yolks.
In a deep bowl, combine softened butter with vanilla and half the powdered sugar, beat at low speed for 5 minutes. Then add the yolks and beat for another 5-7 minutes.
Sift the flour with baking powder and add it to the yolk-butter mixture in portions, stirring after each. You should get a homogeneous mass without lumps.
Pre-chill the egg whites, whisk and bowl. Then combine them with a pinch of salt and beat with a mixer until stable peaks form. Add the remaining powdered sugar while whisking continuously.
Place the whites in portions into the yolk-butter mixture and gently mix with a spatula from bottom to top so that the whites do not fall off and the dough remains fluffy and airy.
Melt the dark chocolate in a hot water bath. Mix with cocoa powder and cognac. Pour the mixture into half of the dough and stir until it becomes homogeneous.
Pour the dark dough into the mold and bake in the oven for 25 minutes. Cool and cut out identical bunnies using a cookie cutter. Set aside.
Line a baking pan with oiled parchment, pour in the light batter, root the bunnies vertically and bake in the oven for 15 minutes. Then remove the pan, pour in the remaining batter and cook for another 40 minutes. Cool and remove the cake from the pan.
Prepare the frosting for the cupcake. Combine butter, chocolate and honey in a saucepan. Melt the ingredients over low heat, stirring. Pour over cooled cake. Decorate with colored sprinkles.
