Cookies “Ears with Sugar” are simply doomed to success. That same taste of childhood that you will never forget. To simplify the task, some cooks prepare it from store-bought puff pastry. But it is cottage cheese that gives the dessert its delicate taste and amazing flaky texture. Add to this the subtle aroma of cinnamon and the slight spiciness of ginger, and you will get an excellent dessert, appropriate for both holidays and weekdays. Well, if this is your debut as a novice cook, then you can be sure that cookies according to this recipe always turn out consistently tasty, soft and airy. Serve it with tea, but coffee goes just as well, believe me.

Wheat flour - 500 g

To prepare “Ears with Sugar” cookies, prepare all the ingredients according to the list. They should be cold. It is better to choose cottage cheese that is soft, but not liquid, and without grains, so that the dough is homogeneous.

Sift the flour and baking powder through a fine sieve into a deep bowl. Thanks to this simple method, it will be enriched with oxygen and the cookies will turn out soft.

Grind the cottage cheese through a sieve, and then combine with eggs and salt. Mix thoroughly to obtain a homogeneous mass. If desired, you can use a blender instead of a sieve.

Add cold butter to a bowl with sifted flour and baking powder, place in a blender bowl and grind into crumbly soft crumbs. You may need more or less flour, depending on the composition of the dough.

Combine the curd and butter masses and mix thoroughly. Knead the dough with your hands. It should turn out homogeneous. Roll it into a ball, wrap it in cling film and put it in the refrigerator for 1 hour.

Prepare the topping. In a flat plate, combine the spices with sugar and stir. Divide the dough into 2 parts. Place one in the refrigerator and roll the other onto a floured surface into a layer. Use a glass to make identical mugs.

Dip each circle into the sugar mixture, then fold it in half and dip in the spices again. Fold it in half again so that the sprinkled surface is on the inside. Dip one side of the triangle into sugar again. Make all the cookies using the second part of the dough.

Preheat the oven to 180°C. Place the preparations on a baking sheet lined with parchment. Bake for about 20-25 minutes until golden brown. Cool to room temperature and serve.
