About This Recipe

The “Red Squid” salad fully lives up to its name: thanks to the beets, the dish turns out bright and elegant. The most difficult and crucial moment is boiling the squid. To make the meat tender and soft, simply place the seafood in boiling salted water with allspice and bay leaf, and then immediately remove the pan from the heat. Cover with a lid and leave for 10 minutes. Cool the squid and cut it for the salad. The meat of these seafood is very healthy - solid protein. You need to combine it with products that emphasize and do not interrupt its taste. For example, as in our case, with beets, dried fruits and walnuts and literally one clove of garlic for piquancy.

Preparation Steps

Step 1

Start preparing the Red Squid Salad by roasting the beets. Preheat the oven to 180°C. Wash the beets thoroughly from the soil with a vegetable brush, and then dry. Place in a sheet of foil and wrap tightly.

Bake the root vegetable for about 40–50 minutes. Readiness can be determined by piercing the beets with a fork or knife. Cool, peel and cut into strips.

Wash the squid. Place in boiling water, cover and then immediately remove from heat. Leave to infuse for 10 minutes. Remove and rinse with cold water, removing the casing. Finely chop.

Rinse the dried apricots and prunes, and then pour boiling water over them. Leave for 10 minutes. Cool the dried fruits and chop finely. Peel the garlic clove and pass through a press.

Dry the walnuts in a frying pan, then cool. Place in a plastic bag and roll with a rolling pin. Or just chop it very finely with a sharp knife.

In a salad bowl, combine all the prepared ingredients: beets, squid, dried apricots, prunes and walnuts. Season the salad with mayonnaise, add garlic and mix thoroughly.
