Lazy khachapuri is quick and easy to prepare. And they taste no worse than regular ones: just as creamy with a lot of cheese. The flatbreads are called “lazy” because the principle of preparing the dish is really very simple: all the ingredients are mixed, and then the khachapuri is either baked in the oven or, as in our recipe, fried in a frying pan. The main ingredient was and remains cheese. We will prepare our flatbreads based on Adyghe cheese. And you can add suluguni or feta cheese. We will mix the dough with milk, although it is also made with kefir and sour cream. And also add mashed potatoes. It will give the dish a delicate taste and make it even more satisfying. Such khachapuri can be prepared for breakfast, lunch, or taken with you on a picnic.

Break the egg into a deep bowl. Add salt, sugar and milk to it, and then mix with a whisk. You should get a homogeneous mass. Grate the Adyghe cheese on a coarse grater.
You can use ready-made mashed potatoes. If it is not there, then wash the potatoes thoroughly, peel them and place them in a pan with water. Cook until done (about 20 minutes).
Drain the water and mash the potatoes into a smooth puree using a potato masher. Set aside the required amount for khachapuri in a plate and cool (we will need exactly 200 g).
Add mashed potatoes and grated cheese to the egg mixture and mix thoroughly. Sift the flour through a sieve with baking powder. Pour into the egg-potato mixture and knead into a homogeneous dough.
Heat a frying pan over medium heat. Lubricate with vegetable oil using a brush. Spoon out the prepared dough, forming a round cake.
Cover a thick-bottomed frying pan with a lid and fry the khachapuri over moderate heat for about 5-7 minutes on each side. So prepare all the tortillas. Serve lazy khachapuri hot.
