This delicate, airy dessert with a rich chocolate flavor will not leave anyone indifferent. Our step-by-step recipe will allow even novice cooks to prepare it. Ice cream requires fresh cream with a fat content of at least 33% so that it whips well. Choose natural chocolate, without additives, with a cocoa bean content of at least 70%. To ensure the dessert has the right texture, it is important to prepare it with chilled ingredients and in a chilled container. Also, take the time to remove the ice cream from the freezer every 2 hours and stir it. Repeat the procedure several times, and then there will be no ice crystals in the treat.

Prepare all the ingredients for making creamy chocolate ice cream. Pour 20% cream into a saucepan, add sugar and heat on the stove, stirring until the sugar dissolves. Without bringing to a boil, remove from heat.
Break the dark chocolate and place it in a saucepan with hot cream. Stir the mixture with a spoon until the chocolate has completely melted and the mixture becomes homogeneous.
Pre-chill the 33% cream and whisk. Pour the cream into a tall bowl and start whipping on low, gradually increasing the speed. You should get a fluffy mass.
Add the cream into the chocolate mixture in small portions, carefully stirring with a spoon from bottom to top so that the cream does not settle. Continue stirring until the mixture becomes homogeneous.
Place the chocolate mixture in a tray and smooth it out. Cover with a lid and place in the freezer for 4-6 hours. Remove and stir the mixture periodically every 2 hours.
Transfer the finished ice cream from the freezer to the refrigerator. And, after 30 minutes, serve. You can decorate with fresh berries and fruits, chopped nuts or whipped cream.
