This gelatin sugar glaze is the most delicious we've ever made. It retains its shape when cut and is suitable not only for Easter cakes and cupcakes, but also for decorating a variety of shaped cookies. To prepare it we will use instant gelatin. You can do the same with regular ones. Only it will need to be soaked in water for 30 minutes in advance and heated until completely dissolved. When the glaze is ready, you need to work with it immediately, it hardens very quickly. When you are finished, let the glaze thicken thoroughly, then the coating will be dense and the color will be white and opaque.

Dilute the gelatin according to the instructions on the package. Pour gelatin into a small bowl, pour 2 tbsp. spoons of boiling water and mix thoroughly. It should completely dissolve in the water.
If the gelatin has not completely dissolved, just put the bowl in the microwave and heat it up a little. Do not bring it to a boil under any circumstances, otherwise it will lose its gelling properties.
Add sugar and half the water to the saucepan. Place on the stove and heat until the water boils. Continue cooking until the sugar dissolves. Then remove from heat.
Stirring constantly, pour the gelatin into the still hot syrup. It is best to pour it through a sieve so that undissolved grains of powder do not get into the syrup.
Beat with a blender at low speed, gradually increasing it. When foam appears, add lemon juice and continue blending at high speed.
Continue whisking the frosting until it thickens. We check this way: if it flows from the whisk in a thick stream, then you can remove it from the heat. Cover the baked goods with glaze and leave to dry for 2 hours.
