There is a lot of sugar in currants pureed with sugar - it is added in a ratio of 1:1 or even more. By spring, such currants begin to become sugary and lose their pristine freshness. Another nuance: if you grind the berries through a meat grinder, contact with metal destroys some of the vitamins, and mashing them manually is too labor-intensive.
