It is believed that everything tasty is harmful. But the rule does not work when it comes to jelly-like blackcurrant jam for the winter. It can be prepared in two ways. The first is to use the natural properties of currants. This berry holds the record for the amount of pectin. The second is to simply add gelling components. In this case, you can reduce the amount of sugar and cooking time. We will need literally 5 minutes. Any of the methods is good in its own way and, if you follow the rules, can be easily performed even by novice cooks. The berries can be rubbed through a sieve. In this case, the consistency will be more uniform. If you want the berries themselves to be felt, you can pass them through a meat grinder. Jelly jam is delicious on its own and is also suitable as a filling for pies and buns.

Prepare all the ingredients to make jelly-like blackcurrant jam for the winter. Sort the berries, cut off the dry tails. Rinse with running water several times and then drain in a colander. Dry.
Place the berries in a saucepan, add water and place on the stove. Heat over low heat, covered, until boiling. Cook for 2-3 minutes. The berries need to give juice.
Place the currants in portions into a fine sieve and wipe into a clean enamel bowl. We don't need berry pulp. You can cook compote from it.
Another option is to pass the berries through a meat grinder. Then there will be no cake left and valuable skins and seeds will end up in the jam. In this case, the structure of the dessert may become less uniform.
Return the grated blackcurrant juice with pulp to the saucepan. Add sugar to it. Mix thoroughly until smooth. Then return to the stove.
Cook the jam, stirring, over low heat for no more than 5 minutes. Don't forget to remove the foam. It is best to do this with a wooden spoon with a long handle so as not to get burned. Add gelatin diluted in water according to the instructions on the package and heat the mixture, stirring, but not letting it boil.
Prepare the jars. To do this, wash them with soda, and then sterilize them in any convenient way: steam, oven or microwave. It is important that they are dry, as any moisture contributes to the appearance of mold.
Place the hot jam into prepared jars and then seal with lids. The jam will not become thick immediately. It will acquire the desired consistency when it cools.
Turn the jars upside down and leave until completely cool. Next, store in a cool, dark place away from direct sunlight.
