For berry "clouds". Melt gelatin in a water bath, adding water to it in a ratio of 1:3. Beat melted gelatin, sugar and berries at high speed until fluffy and fluffy.
For "caviar" from balsamic. Place the vegetable oil in the freezer for 3 hours. Mix balsamic cream and agar-agar and bring to a boil, let cool for 5 minutes. Take the mixture into a syringe and pour the balsamic drop by drop into the cold oil. Using a slotted spoon, collect the pearls and rinse in a container of cold water.
