Shortbread pie with jelly, berries and fruits is definitely worth making for the holiday! A crumbly crust with a juicy filling, instead of the traditional filling, is covered with a light jelly. It seems that such a recipe would be difficult to implement, but it is not. First, we will knead regular shortbread dough and bake the cake (you can use wheat flour, but if you want to make the dessert a little lighter and healthier, use half regular and whole grain flour). Then bake the crust in the oven until done. To prevent the bottom from becoming deformed during baking, we use a weight. We use beans, peas or chickpeas. And then we’ll cut the berries and fruits, fill them with transparent jelly and let them cool for a couple of hours. The main thing is to choose the right combination of berries and fruits. We chose raspberries and apricots, but you can also combine apples and blackcurrants, mangoes and strawberries. The choice is yours!

Prepare all the ingredients for a shortbread pie with jelly, berries and fruits. Remove the butter from the refrigerator in advance so that it softens a little. Use only natural oil, without vegetable fats.
Sift wheat and whole grain flour through a sieve with baking powder into a deep bowl to saturate it with oxygen and get rid of small debris. You can repeat the procedure twice.
Place soft butter in a bowl with sifted flour. Mix first with a fork and then rub with your hands. You should get fine butter crumbs.
Add sugar and egg to the flour mixture and knead the dough first with a spoon and then with your hands. Do not knead for too long, just enough to mix all the ingredients. Otherwise, the finished baked goods will not be crumbly.
Gather the dough into a large ball and wrap it in cling film (or place it in a bowl and cover with cling film). Place in the refrigerator for 1 hour (or freeze for 30 minutes).
Grease a springform baking pan with butter and sprinkle with flour. Shake off excess flour. Or you can line the mold with special parchment. Pour out the dough and form the sides.
Preheat the oven to 200˚C. Line the dough tin with parchment and place the beans (or any other weight) on it. Bake for about 15 minutes.
Then remove the beans and cook for another 10 minutes without a load. Cool the finished cake. You can immediately remove it from the mold and transfer it to a dish, since you will no longer need to bake the pie.
Prepare the berries. Sort the raspberries, put them in a colander and place them in a pan of water. Then remove and dry the berries well. You can pour them onto a towel to dry faster.
Sort the apricots, remove spoiled fruits. Wash and dry the rest. Then cut each one in half and remove the pit. Cut the halves into slices.
Prepare the jelly. Dilute the gelatin with slightly warm water and leave until it swells. (will take about 20-30 minutes). The packaging usually contains detailed instructions.
Place the gelatin mass on low heat and heat, stirring constantly, until it becomes homogeneous. Then remove from heat and cool slightly.
Add fine sugar to the warm gelatin mass and stir. It should completely dissolve. It can be replaced with powdered sugar to make the mass more uniform.
Place berries and apricots on the crust, alternating with each other, and pour the prepared gelatin mixture over it. Place in the refrigerator to allow the pie to set. It will take at least 2 hours.
Before serving, shortbread pie with jelly, berries and fruits can be sprinkled with powdered sugar and garnished with mint leaves. Cut into pieces and enjoy. This summer pie goes great with any drink.
