Dagestan halva is not what you are used to buying in a store. It is prepared from flour (wheat, corn or rice) with sugar, butter (can be replaced with melted butter - this is what it is most often made with) and decorated with walnuts. You can add vanilla or the essence of the same name to it. Instead of sand, use powdered sugar - it will turn out even more tender and delicate. And for a brighter taste, add lemon zest: this is what you do when preparing Lezgin isita, one of the varieties of dessert. In all cases, this sweet “symphony” will literally melt in your mouth and crumble in your hands (perhaps that is why it is also cut into small portioned diamonds). In a large saucepan, melt the butter over low heat. Add flour in three additions, stirring vigorously after each addition. Continue cooking, without stopping stirring, for about 45 minutes.
Add sugar to the saucepan and continue heating, stirring, for another 10 minutes. The sugar should completely dissolve.
Line a square pan measuring 18 x 18 or 20 x 20 cm with cling film. Transfer the mixture into the mold and smooth it with a spatula. You should get a layer approximately 2.5 cm thick. Directly in the mold, cut the halva into squares, decorate each with half a walnut. Cool completely and place on a plate.
