For raspberries without cooking with sugar for the winter, select the best berries without damage. Remove the stems. Place the berries in a large bowl and mash with a masher - no need to puree, just enough for the berries to release their juice.
Add sugar to the raspberries in several additions, stirring the berries each time so that the sugar is soaked in the juice as much as possible. Leave at room temperature for 6 hours. During this time, stir several times.
