Sort out the honeysuckle. Only ripe and whole berries are needed. Since this is “raw jam,” spoiled and bruised fruit may cause it to ferment. Rinse honeysuckle in cool water. Drain the berries in a colander or place on a clean towel and let them dry.

Place the honeysuckle in a saucepan and add half the volume of sugar. Set aside for about an hour to allow the berries to release their juice. After this, start grinding the honeysuckle, gradually adding the remaining sugar. Depending on your wishes, you can use an immersion blender, a meat grinder or a puree masher.

Let the mixture sit for about another hour. Stir thoroughly occasionally to dissolve the sugar as much as possible. While the berries are infused, sterilize the jars and lids. Let them cool.

Divide the mixture into jars. Sprinkle a layer of sugar about 0.5-0.7 cm thick on top. Close the lids thoroughly. This “raw jam” should be stored in the refrigerator or cellar.
