Beat softened butter and sugar until white and fluffy. Add eggs one at a time, continuing to beat.
Add flour, ginger, baking soda and salt. Stir until smooth. Add chocolate, cut into small pieces. Stir quickly. Cover the bowl with cling film and refrigerate for 30 minutes.
Form the dough into a sausage and cut it into round pieces. Place them on a baking sheet lined with baking paper, at some distance from each other. Bake in the oven at 180°C for 12–15 minutes. Cool cookies on a wire rack and serve.
