Prepare the lemons. Wash them thoroughly with a brush or the stiff side of a sponge with a special dish soap to remove the layer of wax that manufacturers use to coat citrus fruits.
First cut the lemons into thin slices and then cut each into quarters. Remove the seeds. Place the lemons in an enamel pan and fill with cold water until it completely covers them. Leave for 24 hours.
Drain the water. Cut the lemon slices into small cubes, then place them in a clean enamel pan. Fill with 200 ml of fresh drinking water.
Place a saucepan of lemons and water over high heat. Bring to a boil. Cook over medium heat without a lid for 30 minutes. Remove the foam periodically with a slotted spoon.
Add sugar to the saucepan with lemons and water. Cook, stirring, until it dissolves completely. Reduce heat to low. Cook for about 30 minutes more.
Carefully pour the hot lemon jam into dry, sterilized jars. Cover with lids. Place them in a large pot of water (it should reach the shoulders of the jar).
Bring to a boil and remove from heat. Leave the lemon jam for 20 minutes, then roll up the lids. Turn out onto a double folded towel and let cool completely.
