This compote is made from apricots without sterilization, which greatly simplifies the process and eases the lot of the summer housewife, who has more than enough troubles in the summer. The recipe is incredibly simple: remove the pits from the apricots, put them in jars, pour boiling water over them and leave for a while. After which we drain the water and cook the syrup in it, which we then return to the jars. And that's the end of it! There is no need to sterilize the compote: the apricots have undergone double heat treatment, which is quite enough to provide the workpiece with reliable resistance to spoilage.

Prepare apricots for compote. Wash the fruits and dry well with paper towels. Cut the fruit into halves and remove the seeds. Place in a dry, sterilized jar.
Fill the kettle with boiling water to the very top. Cover with a sterilized lid and leave the apricots in the water for 30 minutes. Then, using a special lid with holes, drain the resulting liquid into the pan.
Add sugar and place over medium heat. Bring to a boil and cook for 3 minutes. Pour the syrup over the apricots in the jar. Seal and invert onto a double folded towel. Let cool completely. Store in a dry, dark, cool place.
