Zangaza, the Uzbek brushwood flower, is named so for a reason. This dessert is not inferior in appearance to the exquisite works of professional confectioners. Strips of elastic and plastic dough are formed here in such a way that the finished delicacy takes the shape of a fairy-tale flower. Based on our step-by-step recipe, you will see that this is not at all difficult to do. So in just an hour you will have delicious crispy brushwood ready! Added bonus: Because the dough expands significantly when deep-frying, you'll be serving up a huge plate of this spectacular treat.

Sift 450 g of flour into a large bowl, add salt and mix with a whisk. In another bowl, combine the eggs and milk and mix with a whisk or mixer. There is no need to beat the eggs, just until the mixture becomes homogeneous.
Pour the egg mixture into a bowl of flour, add cognac and knead into an elastic dough. Form the dough into a ball, wrap in cling film and return to the bowl. Leave at room temperature for 30-40 minutes.
Dust your work surface with the remaining flour. Place the dough and roll out into a large thin layer. Cut the dough into wavy strips 5-6 cm wide and 45-50 cm long.
Roll each strip. Roll the dough loosely to prevent the layers of dough from sticking together. Use skewers to prevent the flowers from unraveling during frying. Place the prepared flowers on a floured surface.
Heat vegetable oil in a deep frying pan or saucepan. Carefully lower the prepared brushwood into the oil and fry over medium-high heat until golden brown, about 3-4 minutes. Turn the flower over several times so that the brushwood browns evenly on all sides.
Place the finished brushwood on a flat plate in one layer, this is necessary so that the brushwood turns out crispy. To remove excess oil, line a plate with paper towels or napkins. Continue frying the brushwood until all the dough pieces are gone.
