Stewed beef shoulder according to our recipe has every chance to be included in the list of your favorite dishes. “Middle” (the shoulder part is called this by many butchers) is meat, one might say, lean, ideal for boiling, simmering and stewing. This cut has a very high taste and rich aroma, which are perfectly revealed during “slow” cooking. And of course, the advantage of such a dish is that its preparation does not require much effort, and soft stewed beef is combined with most side dishes.

Cut the beef shoulder into equal pieces measuring approximately 3 by 3 centimeters. Try to cut the meat across the grain, this will help the beef cook faster.
Heat vegetable oil in a frying pan and fry the beef in it over medium heat, about 5-7 minutes, until golden brown. Stir the meat occasionally to brown it on all sides.
Place the meat on a plate. Peel the onions, garlic and carrots. Cut the onion into half rings, carrots into slices about 1 cm thick, finely chop the garlic. Fry the vegetables in vegetable oil until the onion is soft.
Place the meat in a frying pan with vegetables, add salt, pepper and water, carefully move the ingredients together. Bring to a boil and simmer for about 3 minutes.
Cover the frying pan with a lid, reduce the heat to low and leave the dish to simmer for about 1.5 hours. During this time, stir the ingredients a couple of times so that they do not burn. If the liquid from the pan evaporates, you can add a little more water.
5 minutes before the end of cooking, finely chop the parsley, leaving a few leaves for decoration. Add the greens to the pan with the stewed beef shoulder and mix everything well again.
Once the cooking time is up, remove the lid from the pan to allow any remaining liquid to evaporate completely and turn off the heat. Serve the finished dish with a side dish of boiled potatoes, cereals or vegetables, garnished with the remaining parsley.
