Prepare the almond-coconut dough: grind the flour in a blender with coconut flakes. Place all ingredients, except eggs, in a mixer with a spatula and knead the dough at medium speed until a homogeneous mass is formed. Quickly add the eggs and knead the dough. Let stand for 2 hours.
Prepare the cream: mix all ingredients in a blender and beat until smooth.
Prepare the impregnation for the tartlet: mix water and sugar, heat and dissolve the sugar in the water, let cool.
Roll out the dough to 2.5 cm thickness and place in the pan. Soak at least 4 times. Fill the mold with vanilla cream and bake for 30 minutes at 180 degrees.
Cut fresh strawberries in half and place on top of the cake. Sprinkle with crushed pistachios and garnish with mint.
