Cut the butter into pieces and place in a bowl. Melt in a hot water bath or in the microwave. Cool slightly.
Sift the flour through a sieve. In a deep bowl, combine milk, flour, sugar, salt and yeast, mix thoroughly. Then knead into a homogeneous dough using your hands.
Roll the dough into a ball, place in a bowl and cover with a clean towel. Place in a warm, draft-free place to rise. It will take about 1.5-2 hours.
Prepare the filling for the tortillas. Grate the hard cheese on a coarse grater. Cut the ham into very thin slices (you can buy factory-cut).
Sprinkle your work surface with flour. Divide the dough into 4 parts and roll out thinly. Place a layer of ham on two tortillas and sprinkle cheese on top (100 g per tortilla), cover with the remaining tortillas and seal the edges.
Preheat the oven to 200C. Line a baking sheet with parchment and grease with vegetable oil. Brush the tops of the scones with lightly beaten egg and bake in the oven for 20-25 minutes. 10 minutes before readiness, sprinkle with the remaining cheese (150 g) and return to the oven.
