Chicken liver in a jar is an extraordinary dish not only in its composition, but also in its preparation method. Everything about it is brought to perfection - from the appetizing appearance and delicate taste to the convenience of storing the finished product - what could be better than a glass jar? Our recipe suggests filling a jar with alternating layers of liver, onions and green apples, but variations are also quite acceptable, for example, instead of apples you can take slices of dense pear or quince, instead of onions you can use shallots, and lovers of spicy and strong tastes can increase the amount of spices – add nutmeg, coriander, oregano or thyme, in short, you have a huge scope for experimentation, and rest assured that almost everything will turn out to be successful. The main thing is to carefully process the liver and do not forget to season it with good butter!

Process the chicken liver thoroughly. Remove fat and veins by placing in a colander or sieve and rinsing with cold water. Leave the liver in a colander for 5 minutes to drain all the liquid.
Place the liver in a bowl, add salt, pepper and dried garlic and mix gently with a spatula. Leave the liver in the spices for 5 minutes so that it is saturated with aromas.
Cut the apple in half, remove the seeds. Cut the halves into thin slices. Drizzle apple slices with lemon juice. Also cut the onion lengthwise and cut into half rings.
Place a layer of onion in the bottom of a glass jar. Then add a layer of liver and apples. Repeat layers until you run out of ingredients. The top layer should be apples.
Add butter to the jar. Cover the jar with a double layer of foil and press it tightly to the neck. Make several punctures in the foil with a knife, they are necessary for steam to escape.
Place a rack on the middle rack of a cold oven. Place the jar in the center of the grate. Set oven heat to 190°C. Cook the liver for 30 minutes.
Turn off the oven and do not remove the jar from it for another 20 minutes. Carefully remove the liver. Serve hot as a main course or cold as an appetizer.
