Flatbread with cheese and tomatoes is a great breakfast or snack option. For this recipe, you can use any ingredients that are in the refrigerator. We would like to invite you to add sweet cherry tomatoes and mozzarella as a filling. It turns out to be a kind of analogue of Mediterranean focaccia from delicate fluffy dough with viscous cheese. The convenient shape of the cakes makes it easy to take them with you to work or give them to children at school. And their bright taste goes well with a variety of sauces and additives. For example, thin circles of sausage or slices of meat, as well as arugula, basil, spinach and dried Italian herbs will help to diversify it.

Prepare the dough for flatbreads with cheese and tomatoes. In a deep bowl, mix water, yeast, honey and vegetable oil. Cover with a towel and leave in a warm place for 10 minutes until foam forms.
Add 2 cups of sifted flour and salt to the dough. Start kneading it thoroughly with a spoon, and then with your hands, until the dough comes together into a homogeneous lump.
Sprinkle your work surface with flour. Turn out the dough, add the remaining flour and continue kneading the dough with your hands until it completely absorbs it.
Grease a deep bowl with vegetable oil, roll the dough into a ball, place it back in the bowl, cover with a towel and put it in a warm place. Leave for 1 hour to rise.
Preheat the oven to 200°C. Line a baking tray with baking paper. Transfer the dough to a floured surface and knead it down.
Grate the cheese and cut the tomatoes into slices. Roll out the dough 1 cm thick. You can leave it whole or cut it into squares. Distribute the cheese and tomatoes evenly over the dough.
Bake the tortillas with cheese and tomatoes in the oven for 25-30 minutes. They should be browned. Then remove and let stand for about 5-10 minutes. Serve hot with fresh tea.
