The recipe for juicy peaches in their own juice for the winter is the bomb! You will have to work quite a bit, cut the fruits and put them in a sterilized jar, but the result will exceed your expectations. Fruits can be eaten plain, added to baked goods, ice cream or cottage cheese. They taste just like fresh! Unlike traditional jam and compotes, this method is more gentle. Peaches are not subject to heat treatment, and therefore are ready to give us all their benefits even in winter. For this dessert it is better to use ripe fruits. For unripe ones, it may take longer for the sugar to dissolve and you will need to add the slices to the jar when they settle.

Rinse the peaches thoroughly under running water and then dry with a towel. Cut each fruit in half and remove the seeds. Cut into equal slices.
Wash the jars for the preparation with baking soda, and then sterilize them in any way convenient for you (in the microwave or on the stove). You will need approximately 4-5 liter jars.
Distribute the prepared fruit. Mix sugar with citric acid, cinnamon and vanilla. Do this: first lay out a layer of peach slices, and then sprinkle them with sugar. So fill all the jars to the top.
Place the jars in a wide saucepan or basin, pour in water. It should reach the “shoulders” of the cans. Continue sterilizing the workpieces for about 40 minutes over low heat. The fruit will release juice and fill the jars to the brim.
If there is room left, add more peaches to make the containers full. After the time has passed, remove the jars and then roll up their lids.
Turn the workpieces upside down, wrap them in a blanket and leave them at room temperature until they cool completely. Store in a cool, dark place for up to one year.
