Pour gelatin into a small saucepan, pour in 150 ml of cold boiled water and leave on the work surface for 20-30 minutes. During this time, the gelatin should swell.
Place the pan with gelatin over medium heat and heat, stirring constantly with a whisk, for 2-3 minutes. Do not bring the gelatin mixture to a boil; just heat it until all the gelatin grains have dissolved. Remove from heat.
Prepare the base for the fruit jelly layer. Place the frozen cherries in a small saucepan, add 40 g of sugar, pour in 120 ml of cold water and bring to a boil over high heat. Reduce heat to medium and cook for 5-7 minutes.
Add 2 tbsp to the cherries. l. prepared gelatin and cook for 20-30 seconds, stirring constantly. Remove the pan from the heat and cool the berry mixture slightly. The cherry layer will be the first in our dessert.
Place the cherry mixture into glass glasses, cool to room temperature and put in the refrigerator. Refrigerate the glasses until the berry jelly is set, about 30 minutes.
Bring 600 ml milk to a boil. Add 60g sugar and two thirds of the remaining gelatin and remove from heat. Mix thoroughly and cool to room temperature.
Remove the glasses with the frozen cherry layer from the refrigerator and pour the milk mixture onto it. Return the glasses to the refrigerator and leave to set. This process will take another 30 minutes.
For the top layer, prepare cocoa jelly. Add cocoa powder and 20 g of sugar to the remaining milk and mix with a whisk so that there are no cocoa lumps left in the milk. Bring to a boil over high heat and immediately remove from heat.
Add the remaining gelatin to the milk and cocoa and mix thoroughly. Allow the liquid to cool to room temperature. Take out the glasses with frozen jelly and add prepared cocoa.
Return the glasses with three-layer jelly to the refrigerator and let them harden completely; it is optimal to keep the jelly in the refrigerator for at least 2 hours or leave it cold until serving.
Decorate the jelly with whipped cream. Combine cold cream with powdered sugar, beat with a mixer into a thick foam, place in a pastry bag with a star tip and decorate each glass with jelly.
